The grapes come from a combination of estate vines and grapes sourced from carefully selected vineyards in Burgundy. The estate covers 116 hectares across the Côte Chalonnaise, where the vineyards are made up of clay-limestone soils which offer the perfect balance of water retention properties from the clay, while the limestone element imparts natural elegance to the wines. The climate is continental, with relatively cold winters and warm, dry summers creating good ripening conditions. The microclimates are gently influenced by the hilly topography in the Côte Chalonnaise, which leads to slightly lower levels of rainfall than other areas of Burgundy. The estate vines are Guyot-trained and carefully hand-harvested at optimum maturity. The team at André Delorme is fully committed to sustainable viticulture and the vineyards are certified HVE Level 3, which officially recognises the environmental performance, including biodiversity conservation, plant protection strategies, managed fertiliser use and water resource management.

The grapes were gently pressed in a pneumatic press; only the finest, first pressed juice was used in this cuvée. Fermentation took place in temperature controlled, stainless steel vats with selected yeasts, followed by malolactic conversion. The secondary fermentation was carried out in the bottle using the Traditional Method, which was generated by the addition of yeasts and sugar to produce the gentle sparkle. The wine spent 12 months on the lees to build texture and gentle complexity. The dosage for this wine was 9g/l.

 
André Delorme

During the Second World War, André Delorme was wounded on the battlefield, so he left the frontline and returned to Rully in Burgundy. Upon his return, in 1942, he established the eponymous Maison du Vin de Bourgogne, which remains to this day in the heart of the village. His Grands Vins were successful, rapidly gaining recognition and his pioneering spirit led him to develop Burgundian sparkling wines. Over the years, the estate has grown, as has its reputation for producing fine Grands Crémants de Bourgogne. In 2005, Eric Piffaut took over the reins of the house. He comes from a local Rully family, which has been in the wine business for over a century and knew the House of André Delorme well. They produce refined Crémants from emblematic Burgundian grape varieties, which reflect the personality of the Burgundian terroir and offer all the character of stylish fizz.
