Barbera d'Asti 'Palas' is Michele Chiarlo's coolest Barbera. A fruity cherry scented wine with its ripe red berried fruit is a vibrant expresssion of the Barbera grape. Harmonious with great freshness, it has a clean and elegant finish.
This cuvée is produced from the vineyards in the southern part of Asti, where the soil is clayey and calcareous with a good sand content. The vineyard is planted with an easterly to south easterly exposure and the vines are Guyot trained. Harvest takes place manually, when the grapes have reached optimum maturity.
Fermentation took place in temperature controlled stainless steel vats and underwent 10 days maceration with skin contact. A gentle shower system of immersing the cap took place at temperatures of 16 to 18°C, encouraging the extraction of colour, tannins and flavour. The wine went through malolactic conversion and remained in stainless steel tanks for at least eight months, retaining its fresh, fruity and vibrant varietal aromas.
