Left to mature on the lees for three years, this is a full-flavoured, classic Champagne made mainly from Grands and Premier Cru areas with the addition of 5% to 10% of their unique reserve wines.
Bollinger is one of the last remaining independent Champagne houses. Family managed since 1889, Bollinger maintains 164 hectares of vineyard most of which are classified Grand or Premier Cru. Pinot Noir predominates and forms the backbone of the Bollinger style distinguished by elegance and complexity dating back to 1829. The House lets its wines mature for twice as long as the appellation requirement. This is not out of vanity, but because a great wine needs the luxury of time to develop its full character.
