Provence is a land of lavender, garrigue and beautiful coastlines. The grapes for this wine come from Côtes de Provence vineyards across the region, carefully selected to showcase the essence of the terroir in this special appellation. This cuvée includes traditional varieties which have been meticulously cultivated with care from partner growers. The climate is Mediterranean, with the region enjoying 3,000 hours of sunshine a year and the long, dry summers providing excellent ripening conditions. The winds such as the Mistral, which punctuate the warm, dry climate are a significant factor in maintaining healthy vineyards. The geological diversity across the region encompasses pockets of limestone soils, which impart elegance.
The grapes were harvested during the cool of the night, carefully sorted and rapidly cooled further to around 10°C for optimal maceration. Fermentation took place at stringently controlled temperatures of between 14°C and 16°C, within a protective atmosphere to retain the freshness and fruity characteristics. The wine was aged on fine lees with gentle stirring to impart delicate texture, in stainless steel vats, before being bottled during the late winter to preserve the wine’s distinctively fresh style.
