Citrus and tropical fruits aromas combine with characteristic Sauvignon Blanc herbaceous notes. Well flavoured on the palate, with a round, fresh and zesty finish.
Vin de Pays de Comte Tolosan represents wines made in a large area of South West France. The region is situated in the Aquitaine Basin on plains that fall between the Pyrenees, the Massif Central the Atlantic Ocean to the west and the vineyards of Languedoc-Roussillon to the east. Much of the region is influenced by a maritime climate from the Atlantic Ocean, which delivers moderated summer and winter temperatures and high rainfall. Further inland, the climate is more Mediterranean, with warmer and drier conditions during the growing season. The Domaine de Gayssou vineyard benefits from cooler temperatures which imparts a natural freshness in the wine. The vines are planted on a gentle hills of clay-limestone.
The grapes were cool fermented in temperature controlled stainless steel tanks to retain the aromas and purity of fruit. The wine was kept on fine lees for several months under protective carbon dioxide to maintain optimum freshness. The wine did not go through malolactic conversion, resulting in a fresh, crisp style.

Domaine de Gayssou is a 40 hectare estate, situated on the right bank of the River Tarn, close to Gaillac. The estate has deep historical roots; since the 16th century the vines have been passed down through the generations. Building on this heritage, Nathalie along with her brother Christophe, strive to pay tribute to the work that has taken place over the years. Handling the vines with great care and with a respect for nature they produce authentic, rich and fragrant wines.
