Domaine de Gournier’s vineyards are located in the foothills of the Cévennes, a mountain range on the edge of the Massif Central. Covering 180 hectares of vines across 14 different villages, the vines are planted in the best plots according to the variety, where they flourish in the Mediterranean climate. The vineyards benefit from the warmth of the Mediterranean sunshine, tempered by mountain freshness. The vines are grown on the slopes of the Gardon Valley, where the soils are made up of chalky clay top soils with the presence of gravel, which helps to aid drainage. The vines are trained according to the Guyot method and are manually pruned, the soil is ploughed to avoid the use of herbicides and the grapes are harvested during the cool of the night to preserve freshness and varietal fruit character. The estate is sustainably cultivated, encouraging environmental biodiversity and natural resource management. 50 hectares of vines are certified organic.

The grapes were meticulously selected, destemmed and the aromatic varieties were cool macerated on their skins. The berries were pneumatically pressed and the must was drawn off at cool temperatures. Fermentation took place in stainless steel tanks at temperatures of 16 to 18°C. Following fermentation, the wine was aged on its fine lees for five to six months imparting texture, before being bottled.

Domaine de Gournier

Domaine de Gournier is located in the Cévennes region and benefits from excellent exposure to the Mediterranean sun combined with the freshness of the Cévennes Mountains. In 1959, Maurice’s father, a ‘pepinierist’ by trade (a nurseryman specialising in vine rootstock and clones) bought Domaine de Gournier. He pioneered planting noble varieties in a region where at the time hybrids were the norm, with the aim of producing quality wines. At the beginning of the 1980s, Maurice took over, producing wines under the Domaine name. Today, Maurice Barouin and David Helou take care of 180 hectares of vines located in 14 different villages, 50 hectares of which are already organic. We are delighted to list their elegant wines under the 'La Savetière' label.
