Domaine de la Foliette was founded in 1926 but since 1996 it has been in the hands of the scions of two local winemaking families, Denis Brosseau and Eric Vincent. Through limiting yields and rigorous selection in the vineyard, they achieve their goal of crafting authentic wines that reflect and express the local terroir.
The grapes come from vines planted on mica-schist soils on several plots of the La Haye Foussière, Haute Goulaine and Vertou vineyards. The vineyards are farmed using sustainable practices and are certified by Terra Vitis.
After a very gentle pressing and an overnight settling, the must was racked to temperature-controlled stainless-steel tanks, where fermentation was carried out at 15-18°C, followed by a minimum of six months’ ageing on the fine lees.
