Michel Carret and his son Jérôme are the third and fourth generation to work the old gobelet vines at Domaine des Trois Vallons.
The average age of gobelet trained vines at this domaine is forty five years. The vineyard is situated on steep slopes in the Beaujolais-Villages appellation and the average yield is 50 hectolitres per hectare. All grapes are picked by hand.
Following eight to ten days of maceration in temperature-controlled tanks, the must underwent a relatively cool fermentation at 26-28°C and was aged in tank before bottling.
