The vines are grown on a clay-limestone hillside and are pruned according to the Guyot method. The Grenache Gris vines are planted on a north-facing plot, protecting from the heat of the sun, and encouraging balancing freshness in the fruit. Certified HVE3, the vineyard is farmed sustainably and uses sexual confusion of predators in place of insecticides. The use of phytosanitary products is kept to a minimum and hedges are planted to increase the biodiversity within the vineyard. Water resources are carefully preserved, important in this warm, dry Mediterranean climate. The vines benefit from cooling influence from the Mediterranean Sea, promoting a refreshing character in the berries. The grapes are harvested when they have reached optimum maturity in the cool of the night, to maintain the quality.

The cuvée was vinified without the addition of sulphur. The best parcels of fruit were carefully selected before undergoing short pre-fermentation maceration, to extract fruit flavours, aromas and desired levels of structure-giving tannins. Vinification took place in a combination of temperature controlled stainless steel tanks and concrete vats, without the influence of oak, to retain the pure fruit character. Fermentation with selected yeasts was monitored at 23 to 25°C, with frequent pump overs. The wine was aged in concrete vats prior to being gently fined, filtered and bottled.

Domaine La Provenquière

Domaine La Provenquière is a 155-hectare estate, located in the centre of a triangle formed by three villages - Capestang, Maureilhan and Puisserguier - not far from Béziers in the Languedoc. The beautiful château dates back to the 15th century and acquired its name from its 17th century owner Jean Provenquier. The estate was acquired by the Robert family in 1954 and it is now in the hands of the third generation who combine cutting-edge technology with careful vineyard management to create a wide selection of wines from their estate vineyards. The estate is certified as HVE3, demonstrating its commitment to the environment, biodiversity and sustainable viticulture.
