Handed down over three centuries, Hubert Thirot is the fourth generation of his family to produce Sancerre from their 13 hectare domain. Situated above the charming hamlet of Bué, the vineyard is planted on the slopes with nine hectares of Sauvignon Blanc and four hectares of Pinot Noir. Hubert produces elegant, modern and richly aromatic wines from his boutique winery in the heart of the Sancerre region.
The vineyard is situated on the slopes overlooking the village of Bué. The wines owe their richness to the clay-limestone and stony soils. Hubert Thirot follows the concept of ‘Conduite Raisonnée’ in the vineyard, which entails a reduction in the use of herbicides and being mindful of the environment. The soil is worked throughout the vineyard and grass is sown between the rows to stimulate the life within the soil, thus improving the vine's natural resistance to disease. The vines have an average age of 35 years and are pruned according to the Guyot Poussard method, which has been adapted from the Guyot Simple method and is aimed at optimising the vine's health.
