A charming and refreshing Aligoté, with notes of pear and citrus layered with delicate spice, notes of beeswax and floral nuances.
The Aligoté grapes are grown in a 0.73-hectare plot located in Segrois in the Hautes Côtes de Nuits. The high trained, double Guyot pruned vines were planted 20 years ago with a westerly orientation where they benefit from the warm, afternoon sun during the ripening period. The climate is continental: cool winters allow the vine to rest, while warm summers days are tempered by cool nights, encouraging the vines to produce balanced fruit with concentrated flavours and refreshing natural acidity. The soils are made of white marl, on white limestone scree, which imparts an elegant quality to the wine. The vineyard is certified organic and is cultivated with utmost respect for the environment and the balance of the soils, flora and fauna. Herbicides and insecticides are not used; instead, the vines are cultivated using natural preparations. The vines are hand harvested into 300kg crates when the grapes have reached optimal maturity.
The grapes were meticulously sorted by hand. Fermentation took place with indigenous yeasts present on the grape skins, at cool temperatures to retain the purity of fruit. Malolactic conversion took place in barrel and ceramic vats, without bâtonnage. The wine was matured for 15 months in a combination of 85% in French oak barriques, 10% in ceramic Clayvers and 5% Acacia barriques. The wine was lightly fined and filtered to retain the characteristics of the terroir.
Domaines Les Astrelles is situated in the heart of Gevrey-Chambertin. It takes its name from the fusion of ‘Astre’ meaning stars, and ‘Les Parcelles’, to form Les Astrelles, representing the similarity between the mosaic of plots and ‘lieu-dits’ and the stars within a galaxy, each with its unique individuality. The name marries perfectly with the philosophy of individual ‘climats’ in Burgundy, which are cultivated mostly in the Côte de Nuit and Hautes Côtes de Nuit. Jean Marie and Isabelle Chapier took over the 11- hectare domain in 2019 from Pierre Naigeon and have started investing in the estate, with a new winery under construction for the 2024 vintage. The estate has been certified organic since 2019, the average age of the vines is remarkably high, mostly over 50 years, which endows the wines with an extraordinary quality, maturity and concentration. Cellar master Julien Millet, (son of François Millet the former winemaker of Comtes de Vogüé), meticulously crafts wines using indigenous yeasts resulting in silky and elegant cuvées with lovely freshness and beautiful balance.
