Delicate pale pink in colour, this expressive Cabernet Franc rosé offers aromas of wild strawberry and juicy white peach. The vibrant and fruity character is balanced by a fresh and mouth watering finish.
The Cabernet vines come from the Valle de Maule, where the ancient soils are made up of granitic sandy loam, formed from granite from the Coastal Mountains. The soils are full of quartz and are mineral-rich, which enables the vines to express their full fruit potential. The region benefits from a Mediterranean climate, with cold and rainy winters that contrast with hot and dry summers. The lack of rainfall throughout the growth period forces the Cabernet Franc vines to send their roots deeper into the soil in search of water and nutrients, resulting in complexity in the wine. The coastal sea breezes help to ventilate the canopies keeping the vineyards healthy, while good diurnal temperature differences allow the concentrated fruit flavours to be balanced by natural acidity from the cooler evenings.
A cool pre-fermentation maceration took place on the skins at 8°C lasting for eight hours imparting the delicate pale pink colour to be transferred from the skins to the must. Decantation took place for 24 to 36 hours at 8°C clarifying the juice, which was then fermented in stainless steel tanks with selected yeasts at controlled temperatures of 13 to 18°C. Fermentation lasted for 25 days, before the wine was racked and stored for 45 days in stainless steel tanks on the fine lees to impart texture.
