Fresh nose with light fruity aromas and elegant minerality on the palate; compared to Brocard’s regular Chablis, this organic version has an extra degree of vividness and savoury complexity.
This Chablis is from grapes grown in the village of Préhy on Kimmeridgian soils, alternate layers of limestone and marls containing fossilized marine bodies. The vines are approximately thirty years old. The vineyard is farmed biodynamically and grapes are certified as organically grown. Medicinal plants are used to protect the vines from insects and diseases.
Pneumatic pressing of the grapes was followed by fermentation in stainless steel vats. Malolactic fermentation was completed.

The domaine of Jean-Marc Brocard began as just one hectare, a gift from his father-in-law when he married into a winegrowing family. He has since expanded to 200 hectares, of which eighty are biodynamic, and is widely recognised as one of Chablis’s leading producers. The approach is one of minimal intervention in both vineyard and winery: cultivation is practically organic throughout, with ploughing in place of herbicides, predators instead of pesticides, manure rather than fertiliser, and as little spraying as the grapes’ health requires. The results are pure, unadorned expressions of the great chalk slopes of Chablis.
