The country estate Can Llopart de Subirats is located in a singular enclave, in the municipality of Subirats, a mountainous area of the region. The estate comprises 500 hectares of forests and vineyards, of which 102 hectares are dedicated to the vine. Situated at an average altitude of 360 metres, the diurnal temperature differences extend the ripening period and create aromatic profiles. The vineyards cover an undulating topography, with slopes and terraces of limited soil depth, producing vines with great root extension, limited vigour and low yields. 60% of the vineyards are planted as bush vines, with some using Cordon Royat and Guyot training to maximize natural ventilation. The vineyard is cultivated sustainably, with the utmost respect for the environment. Cover crops nourish the soils, pests are controlled with sexual confusion, and green pruning takes place to encourage natural ventilation and reduce treatments of sulphur and copper salts. The vines are hand-harvested.
The grapes were very lightly whole bunch pressed without destemming. The must was then clarified by cool, static sedimentation. Fermentation took place with selected yeasts in temperature controlled stainless steel tanks. The secondary fermentation took place in the bottle as per the Traditional Method, followed by 48 months bottle ageing.

Llopart is a top-quality producer of organic, Traditional Method sparkling wines from their country estate Can Llopart de Subirats, located in one of the highest areas of Penedès. The family’s long winemaking history dates to 1385 and since then, 26 generations have cultivated the family vineyards. In 1887, Llopart created its first sparkling wines, but it was during the early 1950s, that Pere Llopart Vilarós actively contributed to the promotion of their ‘artisanal’ sparkling wines. Since 2019, their bottles bear the name ‘Corpinnat’ the collective brand of which they are co-founders, which distinguish the great sparkling wines of the region from D.O. Cava. They craft fine sparkling wines with strict quality guidelines as they feel the quality is intrinsically linked to origin and terroir. To be designated as Corpinnat, the grapes must be: 100% certified organic, grown in a designated area of Penedès, hand-harvested, vinified entirely on the estate property and receive long lees ageing.
