An aromatic, fresh and fruity Cava, with a lively mousse and a refreshing citrus character with delicate floral complexity through to a long, crisp finish.
The grapes come from carefully selected vineyards located in Almendralejo, Badajo. The soils in this region are fertile, due to their richness in nutrients. They are also rich in clay, offering great water retention properties which helps to sustain the vines throughout the warm growing season in this Mediterranean climate. The terrain has a practically flat relief and the vines are grown at an average altitude of between 200 and 450 metres above sea level. The vines benefit from a fairly dry climate, with mild winters and high temperatures during the summer, accentuated by the warm breezes known as the ‘East Wind’, which help to keep the vineyard ventilated and healthy. The general absence of spring frosts means the vines are not at risk during the flowering stages. The harvesting takes place with a combination of manual and machine harvesting, carried out in a delicate way so the grapes and vines are not damaged. The vines are grown organically, without the use of herbicides and pesticides and the vineyard is in conversion to organic certification.
The two base wines of Macabeo and Parellada were vinified separately. The grapes were chilled to preserve the aromas contained in the skins and to avoid any oxidation. The first fermentation took place at 16°C, and the base wine was blended. The blended wine then underwent secondary fermentation in the bottle, as per the traditional method, during which the characteristic bubbles were produced. Ageing for nine months on the lees added subtle complexity.

Lopez Morenas is a family winery established in 1943. Today it is run by the third generation, who are dedicated to producing characterful wines from the relatively undiscovered D.O. Extremadura. In 2010, they acquired a boutique Cava winery in Almendralejo, which is the only small town in the region of Extremadura -and one the few places in the whole of Spain other than Catalonia - to be accredited to produce Cava. This is testament to the hard work of this small town, which has the privilege of being included under the strict gaze of the Cava Regulatory Council. With a nod to the environment, the vineyard is in conversion to organic status. Winemaker Ignacio González translates the ripe fruit into this refreshing Cava which shows moreish citrus notes.
