The grapes were grown by partner winegrowers, predominantly in the Yonne. The grapes were all hand-harvested into open sided 45kg boxes.

Following a gentle pressing, each variety was vinified separately, undergoing malolactic fermentation before being blended and bottled for the second fermentation. The wine then received an average of twelve months' maturation before being disgorged.
