A pale pink rosé with inviting aromas of ripe wild strawberry and raspberry compote and a gentle hint of spice through to a feast of red summer fruits on the palate with a long, fresh and saline finish.
The grapes come from south facing parcels, on hillside slopes of the Sainte-Victoire Mountain range foothills. The poor soils are rich in gravelly limestone which contributes to the aromatic expression in the fruit, while a clay-rich element retains water to nourish the vines through the warm Mediterranean summers. The diurnal temperature swings with cold nights and hot days, along with the influence of the fresh Mistral winds imbues the wines from this area with distinctive minerality. Further blending elements from the schist parcels under the Maure Mountains and the deeper soils of the upper Var region, bring richness and structure. The vines are trained according to the Cordon de Royat method and the vineyards are sustainably cultivated to promote soil and vine health and biodiversity.
The grapes were harvested at night to retain freshness and the aromatic profile followed by gentle direct pressing and partial maceration on the lees, known as stabulation. Temperature-controlled fermentation took place with selected yeasts in neutral vessels to retain the purity of fruit. Throughout the winemaking process the wines were protected with inert gas to preserve the freshness and aromatics.

After years of dreaming, Jeany and Stephen made the decision to leave the leafy suburbs of South London behind in exchange for the blue skies and sunshine of Provence.
