The vineyards of the Hautes-Côtes de Beaune cover about 800 hectares spread over 30 communes. The vineyard is situated at the top of a hill on the Petits Charmeaux and Chataigniers parcels at 380 metres elevation. The microclimate offers good diurnal temperature differences, leading to precise wines with good balance. The 10-year-old Pinot Noir vines are planted with an easterly orientation, which helps to impart freshness and are Guyot trained. The clay-limestone soils offer a balance of water retention properties to nourish the vines during the summer and impart the characteristic minerality and elegance from the Burgundy terroir. The vineyard is cultivated sustainably and is HVE Level 3 certified. Research is being conducted to analyse the soil’s geology to measure the impact of the cultivation decisions made, on both the vine and resulting wine. The grapes are hand-harvested at maturity.

The grapes were sorted, destemmed and then gently conveyed into the vat via a belt and without the use of a pump. Prior to fermentation, cold maceration was carried out at 10°C lasting four to five days. Fermentation lasted between 18 and 20 days, during which daily punching down of the cap took place. The wine was transferred to barrels, where full malolactic conversion was carried out and maturaton lasted 15 months in French lightly toasted ‘blonde’ oak barrels, of which 30% were new. No racking took place during the ageing process

Maison Prosper Maufoux was founded in 1860, by Prosper Maufoux, a notary who left his job to create the eponymous wine house. Over the years, the family winery grew and became a world-renowned name. In 2010, the Piffaut Family, whose winegrowing roots in Burgundy go back over two hundred years, took over Maison Prosper Maufoux. The family then acquired the Château de Saint-Aubin and its exceptional vineyards and the Château is now the new home for Prosper Maufoux. The 9-hectare vineyard is located in the heart of the Côte de Beaune. Certified HVE Level 3, Prosper Maufoux is passionate about sustainable cultivation; biodiversity is encouraged and environmental research takes place to truly understand the impact of cultivating these distinguished Burgundy terroirs. The most advanced techniques in sustainable viticulture are implemented to protect the future of these famous terroirs in the most respectful way.
