Bordered by Meursault to the north and Chassagne Montrachet to the south, the Puligny Montrachet appellation is at the heart of the world's finest Chardonnay terroir, including the famous Montrachet. Situated just above the 'Champgains' at 350 metres elevation, on a limestone and marl soil, the 1er Cru 'Garenne' vineyard benefits from an ideal south-easterly exposure. The Guyot trained vines are over 50 years old and the tiny plot covers just 0.30 hectares. At one time, a 'Garenne' was a wood surrounded by walls, owned by the lords for hunting small game, particularly rabbits. The vineyard is cultivated sustainably and is HVE certified. Research is being conducted to analyse the soil’s geology to measure the impact of the cultivation decisions made, on both the vine and resulting wine. The grapes are hand-harvested at optimum maturity.

Immediately following the harvest, the grapes were gently pressed as whole bunches in a pneumatic press, followed by a static settling of the juice for 24 hours at 12°C. The musts were then transferred directly into barrels where the alcoholic fermentation and malolactic conversions were carried out. No racking took place during the maturation, the wines spent 14 months in lightly toasted 'blonde' French oak barrels, of which 30% were new.

Maison Prosper Maufoux was founded in 1860, by Prosper Maufoux, a notary who left his job to create the eponymous wine house. Over the years, the family winery grew and became a world-renowned name. In 2010, the Piffaut Family, whose winegrowing roots in Burgundy go back over two hundred years, took over Maison Prosper Maufoux. The family then acquired the Château de Saint-Aubin and its exceptional vineyards and the Château is now the new home for Prosper Maufoux. The 9-hectare vineyard is located in the heart of the Côte de Beaune. Certified HVE Level 3, Prosper Maufoux is passionate about sustainable cultivation; biodiversity is encouraged and environmental research takes place to truly understand the impact of cultivating these distinguished Burgundy terroirs. The most advanced techniques in sustainable viticulture are implemented to protect the future of these famous terroirs in the most respectful way.
