Scala Dei Prior Priorat 2021
Strawberries and blackberries are elevated with violet floral aroma characters. To taste, a subtle, spicy character is followed by a toasted finish. Bold and refined, the mouthfeel is ripe with supple tannins.
The grapes come from vineyards that are 35-65 years old and are planted on the terraces of llicorella (slate) slopes, which are between 400 and 600 metres above sea level. All grapes are hand harvested and pass through two selection processes.
After an intense sorting process, destemming and crushing, spontaneous fermentation took place at a controlled temperature using indigenous yeasts. Once completed, the wine was divided with half being aged in stainless steel tanks and the other half maturing in barrels (French oak, between two and eight years old) for a period of twelve months.
