Carricante, a white grape local to Etna, here gives a fresh, incisive wine with pear, melon and mineral notes. The palate has some textural richness, balanced by lively acidity and an almost salty finish.
The vineyard is situated on the northern slopes of Mount Etna near Catania. It consists of terraced volcanic sediment 600 meters above sea level. The grapes were harvested in early October.
The wine was fermented over twelve days in stainless steel tanks at 16-18ºC, then aged for a further four months in tank. Malolactic fermentation did not take place.
