A vivid, straw-yellow Grillo with fragrant and aromatic notes of peach and melon complemented by delicate floral notes of jasmine. The palate is balanced and light, with harmonious fruity notes of peach and citron and a deliciously fresh finish.
Grillo is an indigenous variety to Sicily, where it thrives in the warm, dry climate of western Sicily and is grown across the region, from the cooler coastal areas to the hills of the hinterland. Grillo benefits from the calcareous soils which are often mixed with sand or limestone. The soils provide good drainage and mineral richness, contributing to the wine's structure and complexity. The soils closer to the coast are sandier, where the vines produce light and aromatic wines. Grillo flourishes on hillside vineyards with good air circulation and sunlight exposure. The warm Mediterranean sunshine allows the grapes to achieve full ripeness, developing rich flavours and aromas. Sea breezes, particularly in coastal areas, help to moderate temperatures and prevent excessive heat stress, while retaining balance in the fruit. The vines are espalier trained with Guyot pruning and are hand-harvested at optimal maturity.
The Grillo grapes were gently crushed and destemmed before being gently pressed to obtain the must. Fermentation took place with selected yeasts in temperature controlled stainless steel tanks lasting around 12 days. The wine was made in an unoaked style to retain the pure varietal flavours and the characteristics of the Sicilian terroir.
