More info

The vines are grown in the Darling region of South Africa. Situated on the country's West Coast, the strategically planted vineyards are significantly influenced by the Atlantic Ocean and the Benguela Current that provide cooling winds that sweep through the vines. These cooling influences not only offer ventilation, helping to keep the vines healthy, they also lengthen the growing season. This longer growing season contributes to the development of intense flavours and complex aromas in the wines. The dry-farmed vines are predominantly grown as bush vines, which allows for better sun exposure and promotes even ripening of the grapes. The deep soils are made up of clay-rich decomposed granite, which offer good drainage. The vines are grown using sustainable winegrowing practices including tight controls on the use of herbicides and pesticides, in order to preserve the region's rich biodiversity. The grapes are hand harvested at optimum maturity.

The grapes were gently pressed to extract the must and remove the skins. Fermentation took place with carefully selected yeasts at controlled temperatures in stainless steel tanks, to retain the pure flavours of the fruit. The addition of 2% Pinotage imparted the delicate pale-pink colour to this rosé. The wine underwent crossflow filtration, before being aged in stainless steel tanks to preserve the freshness. The wine was gently de-alcoholised via spinning cone technology and vacuum distillation. This method was pioneered in Germany by Carl Jung, a celebrated German brand known for crafting exceptional non-alcoholic wines. His ingenious vacuum technique delicately extracts alcohol at low temperatures, allowing the alcohol to be separated while preserving the wine's distinct aromas and flavours. The wine was then prepared for bottling.
