Deep black fruit flavours on the nose follow through onto the palate, where they are supported by elegant and silky tannins. The finish is spicy and savoury, with notes of black pepper and earth.
Mathilda Chapoutier Shiraz is named after both an Australian icon and Michel Chapoutier's daughter Mathilde.
Grapes for this wine are sourced from vineyards planted on a mixture of clay and ferruginous schist. The grapes were harvested by machine at optimum maturity.
Following de-stemming and a gentle pressing, alcoholic fermentation took place in stainless steel tanks and cement vats over a two to three week period. The wine underwent full malolactic fermentation, before undergoing twelve-months’ ageing in stainless steel tanks and cement vats.

The Chapoutier family have long been known as a leading light of the Rhône Valley, but in 1997 Michel Chapoutier expanded their horizons into the New World, specifically the Australian region of Victoria. Initially making wines in conjunction with renowned local wineries such Jasper Hill and Giaconda, in 2009 Chapoutier purchased the Shays Flat and Landsborough Valley estates in the Australian Pyrenees, giving birth to the wholly owned Domaine Tournon. Here Chapoutier’s skilled hand manages to evoke the minerality and elegance of the Northern Rhône, whilst still expressing the soil and climate of Victoria.
