The grapes come from the single vineyard of Lomo de la Era in the DOP Islas Canarias, Tenerife appellation. The vineyard sits in a privileged position within the Paraje de la Cruz Santa, on the western slopes of La Orotava Valley. Here, at an elevation of 500 metres, the vines are exposed to the refreshing influence of the North Atlantic trade winds. Trained in the traditional cordon trenzado method, some vines reach an impressive twenty metres in length. The vines, some up to 80 years old, are cultivated organically in sandy, silty and basalt soils. Viticulture is carried out using organic methods; while natural and implanted cover crops, including cereals, enrich the soil with nitrogen, promoting natural fertility. Treatments are limited to natural products such as sulphur, copper, bentonite and cinnamon. Harvesting is carried out entirely by hand, reflecting the smallholding culture prevalent throughout the region.

Vinification was facilitated by the winery's three-storey design, which uses gravity to gently transfer the wine at every stage. Pre-fermentative oxidation occurred naturally. Fermentation took place with indigenous yeasts and without temperature control, in amphorae. Amphorae allow for a slower, more even fermentation, resulting in complex aromas, flavours and a smooth texture. The wine was then aged for nine months in amphorae, which preserved the varietal characteristics of the Listán Blanco grapes and the nuances of the terroir. No racking was carried out, and the wine was bottled without fining or filtration.
