The vines cling to steep slopes in this stunning vineyard, which is planted with native varieties such as Kydonitsa, Assyrtiko, Agiorgitiko, Mavrodaphne, and Vertzami, alongside international Cabernet Sauvignon, Syrah, and Malbec. The complex soil composition is made up of sand, limestone, and clay, rich in ancient shells, due to the land's marine origins millions of years ago. The Mediterranean climate is characterised by mild winters and warm summers which are tempered by the refreshing sea breeze. The vines are meticulously cared for with all vineyard operations taking place manually, including harvest, with the greatest respect for the environment and in compliance with recognised farming standards. The vineyard and its ancient olive grove form a rich tapestry of natural beauty, biodiversity and a source of inspiration for the creation of the estate wines.

The Kydonitsa and Assyrtiko varieties were handpicked separately in early September and late August. The grapes were destemmed and crushed, then fermented at low temperatures in stainless steel tanks to retain the purity of fruit and varietal character. The wine was matured on the lees for four months in stainless steel.
