Undurraga U Cabernet Sauvignon 2025

The grapes are grown in the Valle Central, where the land is flat, deep and fertile. The soil is sedimentary, with an average texture, clayey loam and good drainage properties. The Cabernet Sauvignon vines thrive in the humid Mediterranean climate which has moderately rainy winters, contrasting with warm and dry summers. The summer ripening period is temperate and dry, with cool nights which create excellent conditions for an extended ripening period. This diurnal temperature difference encourages the production of healthy grapes which mature gradually, accumulating good sugar levels, with balancing natural acidity and expressive aromas. The average annual rainfall is 710 millimetres. These conditions ensure the production of healthy grapes with good varietal flavour characteristics.

The fruit was harvested into 500-kilo bins at optimal ripeness and sorted to ensure only the healthy grapes were vinified. The grapes were destemmed and carefully crushed. Fermentation took place with selected yeasts in stainless-steel vats, at controlled temperatures ranging between 28 and 30°C for seven days, with an additional seven-day maceration allowing the flavours, colour and tannins to be gently extracted. The wine was vinified without the influence of oak, allowing the varietal characteristics and purity of fruit to shine through.
