Undurraga U Chardonnay 2025

The grapes are grown in the Valle Central, where the land is flat, deep and fertile. The soil is sedimentary, with an average texture, clayey loam and good drainage properties. The vines thrive in the humid Mediterranean climate which has moderately rainy winters, contrasting with warm and dry summers. The summer ripening period is temperate and dry, with cool nights which create excellent conditions for an extended ripening period. This diurnal temperature difference encourages the production of healthy grapes which mature gradually, accumulating good sugar levels, with balancing natural acidity and expressive aromas. The average annual rainfall is 710 millimetres. These conditions ensure the production of healthy grapes with good varietal flavour characteristics.

Once the grapes were harvested, 50% were pressed as whole clusters which produces a clean and elegant juice, while the remaining 50% were gently crushed and placed into stainless steel tanks for cold maceration at 4°C, lasting six hours. Fermentation took place in stainless steel vats to retain the purity of fruit, at temperatures ranging between 16 and 18°C and lasted between 18 and 22 days. The wine was aged on its fine lees for 45 days imparting delicate texture and complexity. This wine was vinified without the influence of oak, resulting in a crisp, clean and fruit-forward style.
