A complex blend, combining aromatic rose petal and bitter marmalade notes with a tense acidity and a grippy, sapid finish with hints of smoky black tea.
The grapes come from Barmera in the Riverland and Polish Hill River in the Clare Valley, from vines planted on sandy limestone soils.
The grapes were fermented for two weeks on their skins in stainless steel, without temperature control and using only wild yeast. Following this the wine was matured for twelve months in a 3000 litre oak foudre, before being bottled unfined and unfiltered.

Unico Zelo was founded by Brendan and Laura Carter to promote the planting of sustainable and drought resistant varieties like Fiano and Nero d'Avola, in an effort to reduce the amount of water used in the Australian wine industry, particularly in regions that are drought-prone and heavy irrigation is viewed as common practice - primarily the Riverland.
