A classic wine from the south of Italy, this Salice Salentino offers delicious, harmonious mature fruit, with notes of black cherry, raisins and leather.
The grapes were harvested in the first half of September by both hand and machine.
The must fermented on the skins for four to eight days depending on the batch. It was then racked to fresh tanks to complete fermentation over 8-10 days at 25-30°C. The wine aged for twenty-four months, of which six was in oak barrels.
