The Cabernet Franc is a rare French clone, planted in 1997 at the San Bernardo estate in Maipo. The vines are planted at a high density on vertical trellises and Guyot pruned, with green harvesting to ensure only one cluster per shoot. The Carignan grapes come from vineyards in Maule. The grapes were harvested by hand into ten kilogram boxes.

After cols soaking at 5°C for five days a Bordeaux-style vinification was carried out to achieve good tannin extraction, with daily pump-overs and delestage (rack and return). Temperature controlled alcoholic fermentation took place at 26 to 28°C, with a total maceration time of 32 to 35 days. Malolactic fermentation was carried out in barrel, and the wine was then aged for a further 16 months in French oak barriques, 33% of which were new.

Morandé

Morandé was founded in 1996 by Pablo Morandé, and found immediate recognition both domestically and abroad. Morandé are true pioneers – they were the first family to develop the Casablanca D.O., recognising the fantastic potential of this cool-climate wine region. They also led the way in reviving old viticultural regions such as Maule and Itata, working with old dry-farmed bush vines and unconventional varieties such as Carignan, País and Cinsault. All of the wines are produced with grapes from Morandé’s own vineyards. Their winemaking philosophy is guided by seeking the right terroir for each grape variety, and with significant vineyard holdings they are well placed to achieve this.
