This Fiano combines a bracing acidity with the textured, waxy mouthfeel so typical of the variety. Crisp yet fully ripe, combining green apples, peach blossom and honeydew melon with a savoury, pithy complexity.
Grapes for this wine were sourced from unirrigated, seven year old vineyards planted on iron oxide rich sandy soils over a limestone base, near to the town of Waikerie.
Fermentation took place oxidatively and without temperature control in stainless steel, using wild yeast and was followed by three months' ageing on its fine lees before bottling.

Unico Zelo was founded by Brendan and Laura Carter to promote the planting of sustainable and drought resistant varieties like Fiano and Nero d'Avola, in an effort to reduce the amount of water used in the Australian wine industry, particularly in regions that are drought-prone and heavy irrigation is viewed as common practice - primarily the Riverland.
