A complex array of black fruit, cherry. tobacco and liquorice flavours, are braced by delicate and silky tannins which give the wine a supple and generous mouthfeel. Savoury and mineral notes come through, with the perfectly balanced acidity adding freshness to the finish.
Grapes for this wine are sourced from the organically-farmed Shay’s Flat vineyard, planted at an altitude of 350 metres in the Pyrenees range of Western Victoria. The ten hectares of Shiraz vines are planted on red podzolic soils overlaying iron-heavy schist and quartz.. The grapes were hand-harvested at night.
Following destemming, the grapes were pressed and the juice underwent alcoholic fermentation with the skins. Fermentation took place over a six week period in concrete vats at 25-28 degrees, using indigenous yeast. Following malolactic fermentation, the wine was then aged for twelve months, two-thirds in French oak barrels, twenty percent of which were new, with the balance ageing in concrete vats.

The Chapoutier family have long been known as a leading light of the Rhône Valley, but in 1997 Michel Chapoutier expanded their horizons into the New World, specifically the Australian region of Victoria. Initially making wines in conjunction with renowned local wineries such Jasper Hill and Giaconda, in 2009 Chapoutier purchased the Shays Flat and Landsborough Valley estates in the Australian Pyrenees, giving birth to the wholly owned Domaine Tournon. Here Chapoutier’s skilled hand manages to evoke the minerality and elegance of the Northern Rhône, whilst still expressing the soil and climate of Victoria.
