Bold, spicy and attractively fresh, this combines youthful flavours of blueberry, with green olives and dried herbs on the long finish. The fine tannins add bite and are balanced by the zippy acidity.
The grapes comes from the Birdwood vineyard in the Adelaide Hills, planted on alluvial quartz and clay soils.
Following a seven-day maceration, fermentation took place in stainless steel, using indigenous yeasts and without temperature control. Care was taken to avoid over-extraction, allowing the primary fruit to shine. Minimal sulphur was used at bottling.
