Sourced from plots 8, 9, and section 7 of the estate vineyard, planted in 2008 at 1,400 metres in the highest reaches of the Pedernal Valley, the grapes benefit from a unique, untouched wild terroir. Irrigation takes place from wells that are topped up by an aquifer replenished by Andean snowmelt and rainfall. The vines thrive in sandy loam soils rich in limestone and flint, with low organic matter. This soil composition promotes excellent water infiltration and retention, encouraging deep root systems exceeding two metres. The high trellis trained vineyard boasts a density of 5,000 plants per hectare, grafted onto American rootstock.

The destemmed grapes were transferred to tanks for cold maceration lasting 48-72 hours at 10°C. Fermentation took place with wild yeasts at temperatures of 26-28°C, with thrice daily remontage to fully extract the colour, flavour and aromas. Post-fermentation maceration lasted for 25 days. After racking, 60% of the wine was transferred to second and third-use barrels (70% French, 30% American), while 40% was aged in stainless steel tanks for 12 months.

Bodegas Salentein is nestled in the picturesque Uco Valley just south of Mendoza. In 1996, Dutch entrepreneur Mijndert Pon purchased the estate in what initially seemed to be a rocky desert. He ambitiously embarked on planting vineyards at high altitudes with the aim of producing ‘wines like no other.’ A year later, construction of the magnificent cross-shaped winery began. The four wings of the landmark winery each ferment the wines before gravity transfers it to the underground cellars. The high-altitude vines are planted at an elevation of between 1,050 and 1,600 metres, against the breathtaking backdrop of the Andes Mountains. At this altitude, the vines benefit from optimal diurnal temperature differences and a diverse terroir in which they flourish. Today, Bodegas Salentein is one of the most admired Argentine wineries - not just in the Uco Valley, but in the world. Their focus is producing terroir-driven wines which express the essence of the Uco Valley, and they do so with great purity and finesse.
